What motor, gear and (if) vfd should I use for extruder?

Well I am unable to find a definite answer to this question. What wattage, rpm and torque is necessary to build a proper machine? 1-Do I need a threephase motor or would a monophase do the trick? 2-There are not a single full sentence which clearly says anything about reductors but I concluded I need them in order to reduce the rpm and gain torque from the otherwise fast motors but what kind of gear reductor should I use? There seem to be reductors with different body sizes, I am guessing It corresponds to the body size of the motor, so how should I find which body size my bad boy is? 3-Currently I have two options as 1-An old dishmachine motor, 2- An old monophase water pump motor. I am guessing 2nd would be more fitting but I'd like an opinion. 4-Lastly I do not understand the difference in practice between a AC motor power controller and a VFD? Do I need either of them?
